This idea caught my eye, because we are always looking for new ways to use eggs.  This isn't my photo, so you'll have to use your imagination as to how to create this for your family!

I think we should all eat everything from the inside of a potato.

Absolutely, BE! I think I would use the innards of the potato to make potato cakes, to serve with these. Someone else mentioned saving the insides to make potato soup. Either way, certainly don't throw it out!!

Colleen, you are welcome! I am going to try these tonight, and will update with how I do it, as well as how they turn out.

That looks yummy.
At the moment I have eggs coming out my ears! Thank goodness for angel food cakes that take lots of eggs!

Queen Bee, our hens are cranking up their egg production, as well. Today I am putting 41 eggs in the incubator, I will be making these potatoes for dinner, and will also be hard boiling a bunch that are in the fridge that need to be used. I also have a friend who makes angel food cakes and pound cakes too, with some of our surplus.
